How can I protect my money from the IRS?

I recently became an independent contractor and now I have to pay into federal tax and social security myself, since the money is not taken out by an employer. What are some legal ways to protect my income from being highly taxable? I would like to get a refund at the end of the year instead of owing thousands, or at least break even.
